Lemon Loaf with Chia Seeds Recipe
This Chia Seed Lemon Loaf is a wonderfully light and zesty bake that’s packed with wholesome ingredients. The loaf is made with Greek yoghurt for a moist texture, fresh lemon juice and zest for a bright citrus flavour, and chia seeds to add a boost of omega-3s and fibre. Ingredients:

120g Greek yoghurt (adds moisture and a subtle tang)

60ml honey or maple syrup (a natural sweetener)

60ml coconut oil, melted (a healthier fat option)

Instructions:

Preheat your oven to 180°C (160°C fan) or gas mark 4. Grease and line a loaf tin with baking parchment.

In a mixing bowl, whisk together the Greek yoghurt, eggs, honey, melted coconut oil, lemon zest, and lemon juice until smooth.

In a separate bowl, mix the wholemeal flour, baking powder, and chia seeds.

Gradually fold the dry ingredients into the wet mixture until just combined – don’t overmix to keep the loaf light and fluffy.

Pour the batter into the prepared loaf tin and smooth the top.
